Marie’s Quick Organ Meat Chili
2 TBSP Grass Fed Ghee
1 Medium Onion, diced
3-4 Cloves Garlic, minced
1/2 TBSP Cumin, ground
1/2 Tbsp Smoked Paprika, ground
1 Tbsp Chili Powder
1/4 Tsp Ceylon Cinnamon, ground
1/2 Tbsp Oregano, dry
1/2 Tbsp Parsley, dry
2lbs Ground beef muscle and organ blend
1 Jar Jovial Diced Tomatoes Or Bionaturae Strained Tomatoes (Here I used homemade sauce that needed to get used. I buy both of these products at either Azure Standard or Thrive Market. Save 40% off your first Thrive Market order through our link.)
2 Cups Bone Broth (I make my own or use Bonefide Provisions.)
2 Tbsp Coconut Aminos (My fav is from CoconutSecret) (This is another item I’ll get at Thrive Market or Azure Standard.)
1.5 Tsp Redmond Real Salt (Use our code KHW to save 15% off any Redmond product)
2 Tbsp Non-Fortified Nutritional Yeast (We don’t want fortified because anything fortified is using synthetic vitamins. Our bodies cannot use synthetic vitamins properly. Over time they can really cause harm. I use Sari Foods or Anthony’s Goods brands.)
Any leftover veggies (I added sweet potatoes and Yukon potatoes & kale this time)
1/2 Lemon, squeezed
Sauté the onions and garlic in the ghee. Once you see the garlic browning add the spices. Mix them around and let them really infuse the fat for deep flavor. Next add the ground beef. I really like the organ meat blend from Thousand Hills Lifetime Grazed Farm. I typically order it from Azure Standard, but have also gotten a bulk meat order straight from Thousand Hills. It’s a terrific way to get organ meats into your family. If you have picky family members they will never know it’s not just ground beef, especially in a rich tomato base like this one. They will get all the nutrient density that it offers, great healthy hack!
Once the meat is mostly browned add the rest of the ingredients. If you don’t have potatoes to throw in then you can add black or pinto beans, if you have any of those ready. This time of year I love throwing in butternut or kabocha squash. Use what you have. Let it simmer with a lid on low for 20-25 minutes. Add the lemon juice toward the end of cooking. You could eat with rice. We topped it with whole sheep yogurt, raw goat cheddar cheese, and cilantro.
