InstantPot Short Beef Ribs

This recipe is total comfort food. It is nourishing and delicious. You can pare it with the latkes like I did. We had this meal during Hanukkah. You could also throw some potatoes or other root veggies in the oven at the same time while the ribs cook. I didn’t have room with the 5 pounds of ribs for anything else than what I put in the recipe. This meal is a perfect plate with carbs, protein, and fat.

Ingredients:

3TBSP Organic Valley Grass Fed Ghee
5 LB Grass Fed Bone In Short Ribs
4-6 Organic Carrots, chopped
3 Organic Celery ribs, chopped
1-2 Organic Onions, chopped
1.5 Tsp Redmond Realsalt or Celtic Salt
1/2 Tsp Ground White Pepper (Black pepper works, but white has less oxalates)
4 Organic Garlic Cloves minced
2 Tbsp Organic Bionaturae Tomato Paste
2 Tsp Organic Herbes De Provence
2.5 Cup Beef Bone Broth (Homemade or BonaFide Provisions brand)
1/3 Cup Organic Balsamic Vinegar
1/4 Cup Organic Coconut Secret Aminos

Instructions

Turn the Instant Pot on to SAUTÉ MODE and once it indicates that it’s hot, add ghee. Season the short ribs with salt and pepper. Add the short ribs and sear for 3 minutes per side. Once the short ribs are browned, remove from the Instant Pot and set aside on a plate or large bowl. Add onions, carrots, celery, and garlic to the pot and cook stirring until the onions are softened, about 5 minutes. Stir in the tomato paste, and Herbs De Provence leaves and cook for 1 minute. Pour in bone broth, balsamic vinegar, and coconut aminos. Turn off the SAUTÉ function and add the short ribs back in. Screw on the lid and set the vent to SEALING. Cook on MANUAL at high pressure for 45 minutes. Once it beeps to a finish, let the pressure release naturally for 5-10 minutes before releasing the vent. Open the lid and use a slotted spoon to remove the meat and vegetables from the pot. Enjoy!!!!!
