Coconut Sugar Frosting

It’s rare at our house that we make frosting, only on special occasions. When those occasions arise though, if you have these ingredients at home, it’s really simple to pull off a nice frosting with real food. It can be a fun decadence for certain desserts for sure. I prefer to keep it as simple and whole food based as possible. I personally prefer coconut sugar to cane sugar because my body processes it a lot better. If you can do organic cane sugar, that works just fine.

You do need powdered sugar for this and because it’s more difficult to find powdered coconut sugar, I just make my own. Yes, you can easily make your own in a high speed blender with a dry grinding container. I use our VitaMix. You can also use a coffee bean grinder. Just put the sugar of choice in a bit at a time and process until the granules become powdery.

It’s completely optional, but if you want to add a bit of protein, you can even add some collagen to the frosting. The protein will help balance with the carbohydrates in the sugar.

Coconut Sugar Frosting

8 TBSP unsalted grass fed butter softened (113 grams)
2 cups organic powdered coconut sugar (You can use this to make your own. We also buy ours from Azure Standard. it’s actually the best one i’ve ever used.)
2 tsp organic vanilla extract
2 TBSP raw milk or organic coconut milk ( We get our coconut milk from Thrive Market Save 40% on your first order through our link. I like the Native Forest Simple Coconut Milk.)

Let your butter get room temperature and soften in a medium sized mixing bowl. Next add the rest of your ingredients and you have frosting. You can use a stand mixer or hand held mixer. An immersion blender would work too. You could also most likely mix with a spatula by hand, however you’d want to mix really well. Then frost anything you like from cakes, cupcakes, to cookies.
