Simple Beef Pot Roast

Almost every Monday in the fall and winter we enjoy a roast in the Instant Pot or Vitaclay Slow Cooker. It’s the simplest meal that is so comforting. If you can use organic ingredients, then do so. If not, anything you make at home with gratefulness in your heart and whole foods is always better than anything you could get at most restaurants. When we do the best we can with the food we choose to nourish our bodies with and how it’s prepared then lives literally change.
Ingredients:
2 Tbsp Grass Fed Ghee
3-4 LB Regeneratively Raised Chuck Roast or London Broil
2 Tbsp Organic Balsamic Vinegar or Raw Apple Cider Vinegar
1/4 Cup Non-Fortified Nutritional Yeast
1.5 Tsp Baja Gold Sea Salt (Use discount code KHW)
1.5 Tsp Organic Garlic Granules
1.5 Tsp Organic Smoked Paprika
1/4 Tsp Organic White Pepper (black pepper works too)
3 Cup Homemade or Store Bought Beef Bone Broth or Meat Stock (honestly you can even use chicken, it tastes great too)
5-6 Organic Yukon or Yellow Potatoes, you can chop these, but I add them whole
2 Organic Carrots, chopped
2 Organic Celery Ribs, chopped
1 Organic Onion, chopped
1-2 Tbsp Organic BioNaturae Tomato Paste
Instant Pot Directions:
Combine the garlic granules, paprika, salt and pepper to apply to the meat. Chop the veggies. Add the ghee to the pot on the saute feature and toss in the onion, celery, carrots. Cook those until moderately softened. Turn off the saute feature. Next add the seasoned roast, potatoes, vinegar, nutritional yeast, tomato paste, and stock or broth. Cook on the manual feature for 60 minutes. Feel free to cook some frozen veggies like green beans or peas on the side or throw them into the pot to cook too.
