Spiced Indian Inspired Rice

This rice dish has been on repeat in our house the past two weeks. I know you will absolutely love it! Using a healthy fat like ghee and homemade meat stock or bone broth, it makes the rice much more nourishing and aids in a healthy blood sugar response. We’ve been pairing it with some regenerative grass finished ground beef or lamb. Sometimes we add green veggies and other times we just have some fermented veggies like sauerkraut on the side. Our family loves Indian flavors, but not so much with the intense spicy heat. So I find that using the more mild, yet flavorful spices, really works for us. There’s something so absolutely comforting about a steamy bowl of rice. The aromatics take it over the top.
Ingredients:
2 Cups Organic White Basmati Rice, soaked overnight
1-2 TBSP Organic Grass Fed Ghee
1 Organic Bay Leaf
2 Organic Whole Star of Anise
1-2 Organic Ceylon Cinnamon Sticks
1 Organic Sweet Onion, diced
3-5 Organic Cloves of Garlic, minced
1 Tsp Organic Turmeric
1.5 Tsp Sea Salt (use discount code KHW)
4 Cups Meat stock or bone broth (homemade or Bonafide brand)
Directions:
Using a dutch oven or stainless steel pot, add the ghee on medium heat. Pop in the whole spices (bay leaf, cinnamon sticks, and start of anise). Saute them for 30 seconds. Add the onions and garlic. Saute them until they have softened. Strain the rice well. Add the turmeric, then the rice to the pot. Mix well. Pour in the meat stock and add the salt. Stir to mix well. Raise the heat to bring to a boil. As soon as it boils, turn heat down to lowest setting, and cover for 12 minutes.

Many imported rices have tested to be very high in arsenic as well as rice grown in Texas. This may be something you want to do as well if you are able.
